Ingredients:
3 cups rolled oats
1/2 cup carob powder
1/2 cup chopped nuts (such as almonds, walnuts, or pecans)
1/4 cup cacao nibs
1/4 cup maple syrup
1/4 cup melted coconut oil
1 tsp vanilla extract
pinch of salt
Instructions:
Preheat the oven to 350F (175C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the oats, carob powder, nuts, cacao nibs, and salt.
In a separate bowl, mix together the maple syrup, coconut oil, and vanilla extract.
Pour the wet mixture into the dry mixture and stir until everything is well combined.
Spread the mixture evenly on the prepared baking sheet.
Bake for 20-25 minutes, stirring every 10 minutes, or until the granola is golden brown and crispy.
Let the granola cool completely on the baking sheet before storing it in an airtight container.
