Carob Chip Cookies

These carob chip cookies are a delicious and easy-to-make treat that is perfect for satisfying your sweet tooth. They are made with simple ingredients and are a healthier alternative to traditional chocolate chip cookies.

Ingredients:

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup unsalted butter or vegan butter

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 tsp vanilla extract

  • 1 egg or 1 flax egg (1 tbsp flaxseed meal mixed with 3 tbsp water)

  • 1 cup carob chips

Instructions:

  1. Preheat the oven to 350F (175C) and line a baking sheet with parchment paper.

  2. In a medium bowl, mix together the flour, baking powder, baking soda, and salt.

  3. In a separate bowl, cream together the butter or vegan butter and both sugars until light and fluffy.

  4. Beat in the egg or flax egg and vanilla extract.

  5. Gradually stir in the flour mixture and then fold in the carob chips.

  6. Use a cookie scoop or spoon to drop the dough onto the prepared baking sheet.

  7. Bake for 12-15 minutes, or until the edges are golden brown.

  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
