1 1/2 cups all-purpose flour
1/2 cup carob powder
1 tsp baking powder
1/4 tsp salt

1/2 cup milk or non-dairy milk
1/4 cup melted coconut oil or butter
1 tsp vanilla extract
1/2 cup chocolate chips
Instructions:
Preheat the oven to 350F (175C) and grease a muffin tin.
In a medium bowl, mix together the flour, carob powder, baking powder, and salt.
In a separate bowl, mix together the brown sugar, egg or flax egg, milk or non-dairy milk, coconut oil or butter, and vanilla extract.
Gradually stir in the flour mixture.
Fold in the chocolate chips.
Fill the muffin cups 2/3 full with batter.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
